The stalls are made up of a mixture of hawkers and more upscale food outlets in Kuching. Some are very simple, just letting the food speak for itself. Others try a little bit harder, with a nice "shopfront" and decor. To a certain extent, the look of the stall serves as a rough measure of the quality of the food. Some of the stalls selling just one item are also worth checking out - these tend to be the "specialists".
